Why would you ruin perfectly good tuna or salmon like that? Why can’t food just be allowed to be what it is instead of having to pretend it is something it is not?
That’s been the baffling thing with meat or even specifically beef replacements, that it’s consistently been this half assed attempt to just swap something else in while leaving the recipe unchanged and it doesn’t work. Like tofu isn’t a generic meat replacement, culinarily it’s more like a very mild cheese that doesn’t melt and it just serves a similar role to meat in fleshing out a meal when prepared properly; it isn’t a 1:1 switch and instead has to be handled in its own way. Or like how companies tried to just swap in ground poultry for ground beef and sell it as a “health conscious” choice when preparing ground poultry so it’s not revolting takes a fair bit of practice.
Of course now there’s Impossible Meat which is cheaper, easier to work with, and better than ground beef so there’s now one exception to that principle.
