If you boil something in water you are extracting the flavor into a stock. Stocks are commonly used for their flavor in cooking around the world. In France just like in China.
When I was in Japan, getting the yakiniku beef and air frying it as it was (no additional seasonings, just whatever preservative was used) then eating it with white rice was my cheap, tasty lunch

I don’t have an air fryer or a steak but I’ve seen some people claim that air frying a frozen steak is actually the best way of preparing it.
