      I made those too, first time. Cooking the tongue made am amazing broth.

        All the head meats are good. Had a whole goat head once in Mexico and we picked it clean.

      Thinly sliced tongue was SO good. It has such a great texture.

    Brings back memories. The old man used to pressure cook beef tongue and then turn it into the most delicious coconut-milk-based curry. Lengua tacos are also super delicious.

      If it’s done well, the only difference between tongue and carne asada is that the tongue is more tender.
