Wild mushrooms have to be one. They are incredible and can provide all the umami you ever need, not to mention complex flavours. The vegan foods I make so often rely on shrooms, I use a lot of dried mushrooms.
There’s a species I like to pick that tastes like curry and if you put it somewhere sweet it tastes like liquorice. Amazing.
Pickled, dried, salted, raw, cooked… always great.
Edit. They are also a gift from the earth in a way that makes me feel very humbled. I can just walk into the forest and all these wonderful things are just there.
When I have very good shrooming luck like I did today, I do tend to say a thanks to the local spirits and gods of the forest, in true pagan fashion, lol. Those beliefs are still very much alive in the day to day customs even though we rarely think about it.
I just watched someone picking any mushroom they can, with an expert to help them know what is and isn’t edible and I’m like, “I have to go there(all the way to China) after a rain and pick mushrooms to eat with an expert one day!” And my boyfriend said, “Y’know you can do that anywhere(it rains) right? There are mushroom experts everywhere.”
That blew my mind. I thought mushroom hunting was this unreachable dream of mine, but maybe it’s more tangible of goal than I thought.
You should definitely do that, it’s the most amazing non-harmful way to “hunt” and an endless source of dopamine for all the senses.
At least here we have local mushroom clubs/unions, I belong to one. They do a lot of activities and teach others about all things fungi. Always be very very sure you know what it is you are picking and eating, I would start with the safe easy stuff like yellow chantarelles.

A good, fresh porcini is a galaxy of flavour. Nothing I’ve had comes close.

Agreed. And if so lucky to have enough of them to dry them, the broths and things you can make from dried porcini are out of this world delicious.
