Best Italian I’ve ever had in my life was a small restaurant down in Jaco. They opened up a brand new $300 wheel of parm just to make that pasta dish where they scoop it out and throw everything in it. Owner comes out and I keep asking him if he’s sure, “Absolutely! I’ll just make it the special next week!” He preps it for us. People are filming it. The hostess calls in a band from on the street who comes and plays for us… It was like something out of a movie.
Ooo… All I have ever seen done inside the cheese wheel is alfredo using the cream and pasta to melt and incorporate the cheese into the sauce. Full on spaghetti bolognese inside a wheel of parm would be pretty awesome too.

Dug up one of the pics. I don’t remember it being spaghetti. I thought it was fettucini. Either way, yeah, it was delicious. There was nothing left.

What do they do with the scooped out cheese?
Some of it goes into your meal, some of it gets saved for other meals.
Use in other dishes, I assume.
