The only flour we refrigerate is the America’s Test Kitchen blend. Other flours I like to keep inside of tupperware but we do store in our cabinet pantry. I’m sure it’s great to refrigerate if you have the space.

All of the existing posts are just fine though. Let’s not discourage anyone from posting and sharing in their own manner such as recipes. It would be great to see more high effort posts of any kind!

Looks delicious! I’d say he knows what he’s doing. Our daughter, age 3, devours raw fish. We can’t afford to keep up at restaurants so need to learn these skills ASAP. How’d he get so good? Practice or is there a secret source of knowledge?
+1 on the How Can It Be Gluten Free book. The ATK flour blend is our go-to (although it contains xantham gum).
