Leftover chicken pasta from last week but take the meat off the thighs and mix in some red pepper flakes and mozzarella when reheating the sauce.
I wanted garlic knots but only had 20 minutes. Enough time for a soda bread and air fryer? Looking online I found exactly one recipe three times. And it wasn’t for an air fryer. But I can math.
I didn’t have buttermilk. I had expiring milk and vinegar.
Soda bread garlic knots
Servings: six little knots
Dough:
1 cup all-purpose flour (120 grams).
1/2 tsp baking soda.
1/2 tsp salt.
1/3 cup buttermilk or equivalent
1 1/2 tbsp olive oil
Garlic Butter:
2 tbsp unsalted butter, melted.
1/4 tsp granulated garlic.
1 tsp dried parsley.
- Whisk together the dry dough ingredients in a bowl.
- Mix in the milk to form a dough.
- Kneed on a floured surface for two minutes.
- Cut into six equal portions
- Roll each out to about 8 inches long.
- Tie into a knot.
- Pour oil into air fryer baking pan/basket
- Cost each knot in the oil
- Cook at 400 for 7 minutes
- Mix garlic butter ingredients
- Pour the butter mix over the knots and toss.
- Serve.
Cost per person: $2.10
Love to use my old milk and vinegar to sub for buttermilk!

Here is what worked from.. This is definitely workable dough instead of a typical batter for a soda bread. It is definitely trying to be as close to a year bread as possible.
Omg. I’m definitely going to have to give these a try. Seeing as they put cheese in the middle, I think I may have a winner in my house. Soda bread + garlic + cheese. May also experiment and throw in grated parm instead.

I’m thinking this recipe has a lot of potential for variations. I might try some stuffed teriyaki chicken buns with that dough. Egg wash the top and sprinkle with sesame seeds.
