Over salted some vegetable broth and used a couple potatoes to help absorb some of the salt. And it surprisingly worked! But I was left with a couple potato halves to figure out something to do with and this was far and above the best result.

I cut one of the halves in half and pan fried, then grabbed some various things from the fridge.

I wanted to try one completely vegan on the bottom right, and I’m happy to say it was very good! But the other ones got a little bit of everything. The garlic chips were fried in the residual heat in the pan and the minced was thrown on the taters directly out of the pan to allow it to bloom. I dusted all with sesame seeds & onion powder(cause I know the dried chives weren’t going cut through).

Make it your own, but boiling potatoes in broth then slice and fry is a cheap and easy way for a delicious snack

    I’ve found that just pan-frying raw potatoes cut in half with the cut side down works great, but the additional water from brining would make them even fluffier.

      They were very good and tender and the crust gave them structure so you could handle them and dip in sour cream. I think it was a Joshua Weissman video that I got the idea to cube and parboil potatoes before pan frying(I believe it was for testing spices), but add in onions, salt, and pepper and it was my go to snack for like a month.
