I’m making chicken fajitas tonight for dinner, it’s going to last me two days so I won’t have to cook tomorrow. Anyway it’s real simple, I just brown tortillas, cut up two bell peppers, fry the chicken in the pan with some oil until it turns brown, add the peppers, add fajita mix and water, stir and let thicken then serve.
I might not be a great cook like some of y’all but I can take care of myself and get some variety in my meals.
Cw: meat
Kielbasa & pasta
- Get your pasta water boiling
- Slice kielbasa into medallions
- Dice tomatoes, smash up some garlic (or skip all that and just use a can of rotelle, mild for me)
- Olive oil in pan on 4
- Get your pasta going
- Add tomatoes and garlic (or drained rotelle). Saute a little
- Add sausages, once that’s cooked, drain your pasta and throw that in there too. Mix it around for a bit and then let it cool.
I use banza rotini, it’s chickpea based. Pretty good.
These are on my list to try making. Friend of mine makes them from time to time and they’re fucking amazing. 🤤

It’s pretty good. Way better than I expected it to be.

more of a side than a main, but i recently got an induction stove with the potential for a “bridge” and finally got a sweet griddle to drop on it. and i wanted to test out some griddle cooking, so i tried out a very basic recipe for hash browns.
used red potatoes instead of russets, and they were getting older like the eyes were budding. so i peeled them down aggressively.
grated coarsely (largest holes), put on a strainer and ran cold water for a few minutes, then wrapped em in a clean cloth hand towel and wring the absolute shit out of them to take out as much moisture as possible.
3 small potatoes 1 tbsp oil (i used peanut) mixed into the shredded, rinsed and wrung potatoes set the heat on 3 (out of 10) added a healthy pinch of sea salt, mixed by hand
another tbsp oil on the griddle, spread around
put palm sized clumps on the griddle and pushed down with spatula, dribbled a little more oil around the edges and let them sit for 20 mins. resist urge to fuck with them.
flip and sit for another 8-10 mins
crunchy on the outside and soft inside. very close to yummy waffle house / diner style. if i had a cover for the first part, i think they would have been more even.
definitely a good foundation recipe for adding in peppers, onions, cheese, whatever. totally respectable on their own.
i think russets wouldn’t require as aggressive of wringing out, because they don’t have as much moisture.
i learned how to make spaghetti putanesca, i love the mix of anchovies, capers and olives :3
another quick recipe i learned is mapo tofu. as soon as you have collected basic ingredients for chinese kitchen it opens many doors for you
