Thanks! I used phyllo dough, mostly because I didn’t know better when shopping for the ingredients. I meant to get a regular rollout pie crust and will next time, but this was good too. As you say, it was very flaky and light.
I’d say phyllo is a happy little accident here.
You’ll never go back to pie dough for this now!
