I hear you. But I am guessing that the agents, investigators and other case officials are not all boomers. There are probably hundreds of people on a case like this and their ages probably span all age groups.
Then the real question is: why the hell has a digital medium been printed just to be scanned + OCR'ed? (and because clearly redactions are not done physically).
Not trying to protect Apple or Tim Cook, but can I just say that the headline is kinda silly.

But I guess they need something news-worthy to pin it on.
I remember using Monica years back for something similar. Quickly lost the habits of using it since it was a lot of work updating and it didn't feel like it was worth the effort.
People here give some good advices for privacy focused individuals, but that is not the answer to the question being asked. Those people need stuff that just works and protects them - perhaps at the expense of maximum privacy, but who cares? They don't (unless the know what they are doing in which case they don't need the advice).
A good read is a good read.
