Did you use rice that was cooked the day before? When making nasi there is little need for moisture because you would like the rice get fried.

I would not let it uncovered though. My grandma always left it on the stove, with the lid on the pan.
Love nasi, you could also sub the shrimp paste with fish sauce. Use some spring eggs and peas in it.
