Depends on what your threat model is. Sure a fully locked down mobile OS is more secure, but I also care about freedom and privacy. It's not all black and white.
In addition to that, in most European countries you have to register with your ID in oder to get a mobile phone number. So its provably end-to-end related to your identity.
I prefer apps that require no phone number. Like Threema, SimpleX, Session, Status, XMPP, or Tox.
Hashing doesn't really do anything because there are too few possible phone numbers. Easy to bruteforce. See the researchers who enumerated the WhatsApp users database recently via the internet...
I have had this idea in my mind of building a privacy-first, open source dating app built on "privacy by design" principles. Still didn't get to it tho.
Culture. For the same reason why in american music every swearword is beeped out, which seems ridiculous to everyone else in the world. It's just how it is.
Depends on your security and feature requirements. I found that Mega works well for music streaming on mobile, and the E2EE is reasonably trustworthy for that use case.
