TF2 is a nearly 20-year-old game at this point. Gibs in cartoonish games used to be pretty common from Quake and Unreal Tournament so TF2 wasn't really out of the ordinary. Of course, gibbing still exists in realistically-themed games like Hell Let Loose but sensibilities have changed around cartoonish games. Overwatch and the like are totally bloodless and I'm sure there's an expectation now that kids and casual gamers are part of the audience for games like that.

Too low pressure can cause pinch flats for sure. But In most cases, inflating up to or near the maximum pressure the tire can handle will give you bad ride quality. My 23mm road tires say up to 120psi and I run them at about 90 front/95 rear. Your typical 2 inch MTB tires that say "up to 60 psi" should usually be run closer to 30-40. It does depend on the total weight carried as well as the surface you're riding on.
