My state requires ID (I'm unsure if there's a max you can give without it, but I brought like $50 and needed ID) and they're also required to mail a check instead of giving cash on the spot. I imagine that helps deter some people from trying to get a quick payday.
I also have a pretty small desk, and I use a desk mount monitor arm. It's got two arms holding 2x 27" 1440p monitors, which works great. I usually have papers or even another laptop on front of the screens.
Though I recent started to contemplate switching to a 4k ultra wide, since I don't play any competitive games realy, and the single wide monitor seems like it would be sweet for the single player games I do play.

There are some good soy protein options too. Tofu can be cooked a bunch of different ways, and there's tempeh which is similar but different. One of the lesser knowns is TVP or textured vegetable protein, which is soy, but comes in different forms like mince or chunks (like ground beef). Its pretty cheap (especially in bulk), shelf stable and has good protein.
