Rolled Maple Pork Tenderloin
Ingredients:
- Butterflied Pork Tenderloin pounded to 1/4" thick
- Salt
- Pepper
- Italian Seasoning
- Herbed spreadable cheese
- Dried Cranberries
- Cut Dried Apricots
- Maple Syrup
Instructions:
- Add salt, pepper and italian seasoning to both sides of pork.
- Spread cheese on one side.
- Top cheese with cranberries and apricot chunks.
- Roll meat and secure with toothpicks.
- Use toothpicks to secure the roll and then place it seam side down on baking sheet.
- Bake 375°f for 20 minutes.
- Take the pan out of the oven.
- Apply maple syrup coating to meat.
- Return to oven and cook the meat for 10 more minutes.
- Pull the meat out and let it rest for 15 minutes before carving.
