It’s just too damn expensive a lifestyle in the West. With all the government subsidies, it is cheaper to feed, slaughter, and package sentient beings that it is to convert plants into consumer friendly products. On a level playing field, vegan and vegetarian lifestyles make economic sense, but that is not the system governments set as food policy.
Thats a common and understandable misconception but as far as i know vegan diets are cheaper. I search in duckdcukgo and i found this https://www.pcrm.org/news/news-releases/going-vegan-could-save-more-650-year-grocery-costs-finds-new-research. I havnt fact check it though.
If you home cook from scratch that is definitely true, but if you depend on a Beyond Meat-style ready-made American diet, then not so much. An impossible Burger cost 3X a beef patty. Hopefully, increased demand will increase volumes and decrease prices.
