Open source should not be about making money. If you start an open source project with the idea that some time in the future you'll make money, then it's already a lost cause. I'm with Stallman on this, even though I despise him as a person.
I have a lot of music using umlaut and all other kinds of accented characters, even Japanese characters, and never had issues with them. Try symfonium client and see it you have the issue. I'll check tempus with my server to see it there's anything wrong.

I don't understand your "problem". If you have your domain it's pretty painless to switch providers. You export your mail, import it to your new provider, then change DNS records and you're good to go.
