You left out the part where the animal has to be conscious, which, like I said, is the only real difference. Even if you believe that you can taste the fear in your animal product, wouldn’t the animal being unconscious for the process produce less?
What I understand is that the consciousness requirement was placed so that people could verify that the animal was healthy and had not been ill-treated. Stunning is allowed after examination and before slaughter. Meat certified by the UK Halal Food Authority, for example, is from stunned animals.
