Yeah, there are games where side quests are just cookie cutter and all look the same and there are ones, where you won’t get full experience of the game unless you also do side quests and they can even affect game ending. Witcher 3 was such experience for me. If I would just storm through main quest, ignoring side quests I don’t think the game would leave as much of a lasting impression as it did.
Really? I tend to ignore side quests unless they capture my attention and are good.

Witcher 3 is definitely one where I completed every side quests I could get my hands on.
